Salmon Burgers (Low-Fodmap/Gluten-Free)

Ah the infamous salmon burger. What I like about salmon burgers (or any burger for that matter) is that they are so versitile. You can pretty much do whatever you want with them. I’ve never been a fan of ground meat so burgers aren’t really my thing…BUT these salmon burgers are a whole different story. I served these bad boys on Udi’s Gluten Free Hamburger Buns with homeade avocado spread. 

Here’s the recipe: 

Salmon Burger (makes 5 patties)

  • 1.5 lbs fillet of Salmon
  • 1 C. Cooked Quinoa 
  • 1 C. Chopped Kale 
  • 1/3 C. Green Spring Onion (tops only)
  • 1 Egg 
  • 1/2 tsp Old Bay 
  • 1/4 tsp Dill, Rosemary, Sea Salt, Black Ground Pepper 

Avocado Spread 

Combine following ingredients:

  • 4 Avocados 
  • 3 TBSP Lemon Juice
  • 1 TBSP Lime Juice 
  • Salt and Pepper to taste 


  • Cook quinoa as directed on package
  • Chop and measure 1 C. Kale and microwave for 30 seconds 
  •  Mix quinoa, kale, spring onion, egg and seasonings
  • Finely chop fillet of salmon and add to mixture
  • Form into 5 patties 
  • Grill on medium for approximately 5 minutes  each side

Gluten Free Banana Blondies

I secretly get really excited when I notice I have super ripe bananas because that only means one thingโ˜๐Ÿป๏ธ: time to start baking๐Ÿ˜‹ ๐ŸŒ

I have experimented with a bunch of recipes throughout the years and this one is definitely one of the best. I got this one from and only made a few tweeks since it was already near perfect!! 

I made these to have for dessert after my family’s “Sunday Sauce” and they did not last long! I would say that is a success! 

Here is the recipe so you all can enjoy as much as we did!:

Healthy,vegan, gluten free banana blondies:

  • 280g mashed ripe banana (2-3) 
  • 25g (1.5 tbsp) melted coconut oil 
  • 50g (1/4 C.) brown sugar 
  • 1/4 C. almond milk 
  • 1 tbsp vanilla extract
  • 180g (1.5 C.) Bob’s Red Mill Gluten Free All-Purpose Flour 
  • 1.5 tsp baking powder
  • 1/4 tsp baking soda 

*feel free to add in any extra goodies like nuts, dark chocolate chips, etc

  1. Preheat oven to 320F and spray 8″ brownie pan with nonstick spray. 
  2. In a mixing bowl, mix together first 5 ingredients (mashed banana, melted coconut oil, vanilla, milk and brown sugar)  
  3. Once mixed, add in remaining ingredients (flour, baking powder, baking soda)  
  4. Bake for ~30 minutes 
  5. Once cooled, try not to eat the whole pan! Or do… judgement 

I enjoyed mine topped with some So Delicious Coconut Milk Vanilla ice cream and it did not disappoint!
